Carrot cake

  • Cooking time: 1¼ hours - 1½ hours
  • Ingredients: Cake: 400g self raising flour, 2 tsp baking powder, 1 tsp bicarbonate of soda, 1 tsp mixed spice, ½ tsp ground ginger, ½ tsp ground cinnamon Topping: 225g cream cheese, 10ml clear honey, 225g stork margarine, 225g light brown sugar, Grated rind of 1 orange, 4 lg eggs, beaten, 175g sultanas, 400g carrots peeled and finely grated, Strips of orange zest to decorate
  • Instructions
  • Pre-heat the oven at 180°C/ Gas mk4. grease and line a 23cm round cake tin. Sieve the flour, baking powder, bicarbonate of soda and spices into a large bowl. Add all the remaining ingredients except the carrot and beat until well mixed, abour 1 - 2 mins. Add the grated carrot and mix until well combined.
  • Spoon the mixture into the prepared tin and bake for 1¼ - 1½ hours until a skewer inserted into the centre comes out clean. If necessary cover with foil towards the end of cooking. Leave to cool in the tin and then turn out onto a wire rack.
  • For the topping, beat the cream cheese and honey together, spread on top of the cake and decorate with the thin strips of orange zest.
